Vegan Chicken Alfredo

Pasta, pasta, pasta! Every royal’s favorite way to splurge + my favorite childhood dish. Long story short, if you search the Internet for a while, you can find an embarrassing three year old tribute to my favorite alfredo sauce! But alas, pasta is not the healthiest dish the royal kitchen, and is typically excluded from any healthy meal plan. Never fear royals, the knight in shining armor of pasta dishes has finally been created. Behold! A healthy, vegan, chick’n Alfredo! This dish has it all! Keep reading to find out how to make IT!

PASTA:

As we know pasta is NOT traditionally healthy, so I subbed the usual with this delicious chickpea pasta! It comes in so many shapes! Rigatoni, shells, angel hair, etc! I used 2 oz of penne. CHICKEN:

Good old fashioned chicken sure isn’t the stuff for you vegan or vegetarian folk! If you would prefer an option from the royal coop, prepare the chicken and cut into strips. SAUCE:

For the sauce, you’ll need:

•1/3 Cup Olive Oil

•2 Tbs Cashew Milk

•2 Tbs Tahini Sauce

•Garlic Powder (USE EXTRA!)

•Basil (USE EXTRA)

•Italian Seasoning

•Pepper

•Salt

•Nutritional Yeast

•OPTIONAL: VEGAN PARMESAN

Combine and stir well!

PREPARATION:

Measure five strips of chicken out and 2 oz of pasta before combining in a bowl. Pour desired amount of sauce over mixture. Top with basil, pepper, salt, garlic powder, nutritional yeast, and vegan Parmesan. If you would like thicker sauce, whip in a vegan cream cheese to the sauce. (daiya! 😊) YUM!
